Do not run from inside the 7z archive. Extract to a folder like D:\PortableApps\Office2021. Extraction takes about 3-5 minutes due to the 70,000+ small files.
The standard Office 2021 sends telemetry (crash reports, feature usage) to Microsoft. Portable repacks often strip out the Telemetry and Watson (crash reporter) DLLs.
